Grandma Minnie's Oatmeal Cookies

Grandma’s Oatmeal Cookies (Makes 16 - 18)
From: Melinda MacLean – May 6, 2001

½ C. Raisins
1/3 C. Water
½ C. Shortening
1 Egg
1 ½ C. Dark Brown Sugar
1 ½ tsp. Vanilla
2 C. Flour
1 ¼ C. Oats – not instant
2 Tsp. Baking Soda
¾ tsp. Cinnamon
1 tsp. Salt
½ C. Raisins

Directions: Preheat oven to 275 degrees. Combine raisins with water in blender or food processor. Blend one minute or until very smooth. Combine raisins puree with egg, shortening, brown sugar and vanilla. Mix well. Add the dry ingredients. Mix in the raisins. Spray the pan with Pam. Roll 3 Tb. of dough into a ball and press flat. (1/2 inch flat). Bake for 18 – 20 minutes. Do not overcook. (Until golden brown.)

This recipe is from my friend growing up, Melinda MacLean (we lived 4 doors apart from each other). Her grandma, Minnie, made these yummy cookies!
